Roasted Garlic Hummus

Ingredients

To Roast the Garlic:

  • 1 head garlic
  • 2 Tbsp. extra virgin olive oil
  • salt and pepper to taste

For the Hummus:

  • 1 (16oz) can chick peas, drained
  • 3 Tbsp. lemon juice
  • 2 Tbsp extra virgin olive oil, plus extra for garnish
  • salt and pepper to taste
  • 3 cloves of the roasted garlic (use more or less depending on how garlicky you like things – spread any leftover cloves on bread or add them to salads and pastas!)
  • a sprinkle of paprika, for garnish
  • optional: baby carrots, to serve with the hummus

Instructions

To Roast the Garlic:

  1. Slice the very top of the head of garlic off to expose the cloves, drizzle with olive oil and sprinkle with salt and pepper, then wrap in foil and bake at 375 for 45 minutes to an hour.

For the Hummus:

  1. Place all ingredients in a food processor and pulse until you’ve achieved a thick, creamy, paste-like consistency. If the mixture is too dry or mealy, stream in a bit more olive oil until it’s reached your desired consistency.
  2. Garnish with a bit of olive oil and a sprinkle of paprika. Serve immediately with veggies or pita bread, or store in the fridge for up to a week.
