Pizza Dough

Use a homemade pizza dough (like our 15 minute pizza dough or whole wheat pizza dough) or grab a store-bought crust to keep things simple. You can also use a piece of naan, puff pastry (à la our puff pastry baked eggs!), or even a store bought can of crescent rolls dough in lieu of pizza dough if you like.
Make-Ahead Tip: Mix homemade pizza dough the night before, cover the bowl with an airtight lid or piece of plastic wrap, and refrigerate overnight. In the morning, let the dough come to room temperature on the counter while you prepare your toppings.
Pizza Sauce

While we love a classic homemade pizza sauce with tomato sauce, breakfast pizzas are great places to use a white sauce recipe, a homemade pesto (we especially love arugula pesto or pea pesto), or a plain ol' drizzle of olive oil. You can also use your favorite homemade sausage gravy as a breakfast pizza sauce!
Adding eggs to breakfast pizza

There are three main ways to add eggs to a pizza:
- Crack eggs directly onto the pizza, then bake. For best results, build a makeshift dam out of cheese or other toppings, then crack your egg into the center of it (this helps the egg stay in place!) - Use cooked scrambled eggs as a topping. Scramble eggs in a skillet, then spread them over the breakfast pizza along with your other toppings before baking.
- Top the finished pizza with a cooked egg. Poach or fry a few eggs while the pizza bakes, then place the prepared eggs on top of the cooked pizza when you're ready to eat.

Most of these recipes include eggs as a topping; a few feature bacon or prosciutto but no eggs (although you can certainly add eggs using one of the methods suggested above!)

This easy vegetarian breakfast pizza features pesto, fresh asparagus, peas, and arugula! Individually-sized pizzas are topped with large eggs, then baked in the oven.
Copycat Casey's Breakfast Pizza
Moving to Illinois for college introduced me to the surprisingly delicious world of gas station breakfast pizza (iykyk). For the uninitiated, Casey's famous breakfast pizza starts with sausage gravy (or nacho cheese sauce), followed by cooked scrambled eggs, sausage or bacon, and lots of cheese.

Make it a full brunch by adding a few of your favorite sides! We love serving hearty recipes (like pizza) with lighter side dish options, like a five minute lemon arugula salad, strawberry spinach salad, or a cozy leek frittata.
The short answer: No one is really sure! In the midwest, Casey's General Store is famous for their breakfast pizza; in other regions of the U.S., various versions of breakfast pizzas can be found on plenty of different menus (along with the odd disagreement about who "invented" it!) While many of today's famous brunch pizzas (like Casey's) came onto the scene in the mid-1980s and early '90s, there are references to "breakfast pizza" in newspapers as far back as 1957.
If your breakfast pizza is topped with any sort of egg (scrambled egg, fried egg, or a baked egg), we recommend eating it while it's fresh for best results, as cooked eggs can get a bit of a rubbery texture after some time in the fridge.
If you can't avoid ending up with extra breakfast pizza, let it cool completely and transfer to an airtight container. Store in the fridge, then reheat in a toaster oven or in the oven until crispy for best results (we don't recommend using the microwave, as it can alter the texture of leftover breakfast pizza).
If you think you will likely have leftover pizza, we recommend leaving the eggs off of part of the pizza so you have some egg-free pieces to save for another day.
You can use just about any cheese you like on a breakfast pizza! Cheddar cheese and shredded mozzarella cheese are popular choices. Depending on the toppings, we also like to play with cheeses like gruyere, asiago, parmesan, or goat cheese on homemade breakfast pizza.
While things like feta cheese or goat cheese add a delicious pop of flavor, they don't melt very well, so if you want a more melty, cheese-pull vibe to your pizza slices, we recommend using at least one cheese that melts easily (like sharp cheddar or mozzarella).

We love adding sliced bell peppers, mushrooms (sauté them first for extra flavor, à la our goat cheese flatbread!), or crispy hashbrowns. If you'd like extra protein, try adding crispy bacon, breakfast sausage, ham, or additional eggs. A pinch of flakey sea salt is also always a tasty addition to homemade pizza!
For meat: Yes, you should cook any protein (like bacon or sausage) before adding it as a pizza topping: Since pizza cooks fairly quickly, you won't always have enough time for the meat to cook if you put it on the pizza raw.
For eggs: If you're using scrambled eggs (like in a Casey's copycat pizza), then yes, you should whisk them together and cook the scrambled eggs normally before adding them to the pizza. If you're baking a whole egg right on the pizza, you generally do not need to cook the egg ahead of time as it will bake in the oven along with the pizza itself. For best results, we recommend following one of the recipes above, which include detailed instructions on how (and when) to cook the eggs for that particular recipe, along with an estimate for any prep time.
